But we highly recommend venturing out to explore the natural beauty that encircles the city. 

Traverse the hiking trails of Doi Inthanon National Park (home to Thailand’s highest mountain) or visit one of Thailand’s most sacred Buddhist temples, Wat Phra That Doi Suthep, which enjoys a prime position atop Doi Suthep mountain. Tackle the 306 steps to the top (watch out for the sea serpents who guard the path) for incredible views that stretch to downtown Chiang Mai.

At the heart of Meliá Chiang Mai is their ‘360° Cuisine’ concept, with a creative team of culinary magicians working closely with carbon-zero farm, Ori9in. Located around 40 minutes from the hotel in the beautiful Mai Rim Valley, the organic farm was created by double-Michelin-starred chef James Noble and supplies the hotel’s five outlets.

The 360° Cuisine concept goes beyond ‘farm-to-table’. Not only does the produce only travel a short distance, but the team commits to using every possible part of each ingredient. Any food waste is then returned to the farm as fertiliser, completing the cycle. Fingers crossed we’ll see more genuinely sustainable culinary models (that still deliver an outstanding and varied dining experience) like this one in our travels.

Headed by chef Suksant Chutinthratip (or Billy), the five lovely dining options include Laan Na Kitchen for all-day dining and Mediterranean cuisine, fuelled by Meliá’s Spanish roots. Pop in for a meal before seeing the sights or once you return from your adventures. The Tien Pool Bar also offers a refreshing place to unwind with a cocktail and selection of succulent Spanish-style snacks.

If you’re chasing views, Mai Restaurant & Bar is located on the 21st floor: an intimate contemporary setting to showcase the fresh flavours of Thailand. Take in the glorious vistas alongside heavenly northern Thai Lanna-style cuisine which brims with herbs, spices, and fruit.

One floor above, Mai The Sky Bar (actually two bars connected by a glass bridge) serves up some of the best views in the city, perfect for a couple’s tête-à-tête. Arrive for sunset cocktails — on a clear day you can see to Doi Suthep temple in the west — or drop by for a nightcap and drink in the panorama beyond the River Ping to the east. 

Don’t miss:

 A gourmet treat you don’t want to miss is the Spanish Afternoon Tea at Ruen Kaew Lounge, next to Laan Na Kitchen. You can usually visit the lounge for a quick snack but their Med twist on traditional high tea is a real highlight. Think fine teas and fresh coffee alongside Andalusian mini sandwiches with Serrano ham, fresh churros with warm chocolate dipping sauce, Basque-style cheesecake and even sangria ice popsicles! We recommend a light lunch beforehand because you’ll want to enjoy every mouthful.
