The hotel’s rooftop garden has also received an update, with the chef redesigning and cultivating it with a focus on sustainability, and providing quality produce. “There is something incredibly rewarding about picking produce straight from the root, and on your own doorstep,” says Harmer. “I’m really excited about showcasing just how much can be grown locally, and empowering my team to utilise and share their knowledge of the local environment.”
