The official launch of Peppers Noosa Resort & Villas Noosa took place on Thursday, 10 September in typical, laid-back Noosa-style with an exquisitely styled lunch in View on Little Hastings Restaurant for the brand’s key partners and media.
Noosa’s über-star chefs, Matt Golinski, Shane Bailey and Michael Jenkins collaborated to prepare an amazing three-course meal which was complemented by Vasse Felix wines chosen by their wine ambassador, Scott Baker.
For the first course, Fraser Island Spanner Crab, compressed watermelon, avocado, citrus and a prawn croquet prepared by Chef Shane Bailey of the Noosa Boathouse was matched to 2014 Vasse Feix Filius Chardonnay. Shane sourced the spanner crab and prawns from a local firm and used his own garden for the garnishes – freshly picked that morning.
The second course, prepared by iconic chef Matt Golinski was a spiced rump cap, oxtail brik, grilled eggplant, labneh and harissa paired with a 2012 Vasse Felix Cabernet Sauvignon. Again Matt uses only local provedors and farmers for all his ingredients and even makes his own butter from local cream because there is no local buttery.
And what can you say about a dessert prepared by Peppers own celebrity chef, Michael Jenkins except wow! Local berries, vanilla and coconut panna cotta and parfait paired with a 2013 Vasse Felix Cane Cut Semillon, again all local and ultra fresh.
All three chefs are passionate about preparing their dishes paddock to plate and each chef talked about where they source their local ingredients and how their menus are decided by what fresh produce they can obtain locally.
With passionate and directed chefs like these running the local restaurants and cafés, the Noosa food scene could be acclaimed as one of the very best in the country, and a star attraction for tourists from all over the world.
