Nestled in the picturesque hills of the Scenic Rim, just 1.5 hours from Brisbane and less than an hour from the Gold Coast, Beechmont Estate offers the perfect contemporary country escape. This luxury retreat spans 74 acres, features superb accommodation, and is just a stone’s throw from the walking trails of World Heritage-listed Lamington National Park.
However, its exceptional culinary experience truly sets Beechmont Estate apart. At the heart of this is The Paddock Restaurant, led by husband-and-wife team Chris and Alex Norman — a dynamic duo whose culinary journey spans Michelin-starred kitchens and luxury hotels around the globe.
When we visited in August for a night of gourmet indulgence, the estate’s sweeping vistas (paddocks, farmlands, and tall trees dotted across gently rolling hills) were awash in vibrant greens. An instantly soothing, picture-perfect setting that felt worlds away yet so easily accessible for a short break.
Dine & unwind at The Paddock
The Paddock Restaurant offers a chef-hatted (and chef’s kiss) experience that celebrates the region’s abundant fresh produce. Executive Chefs Chris Norman and Alex Norman have curated a menu that evolves with the seasons and effortlessly transitions from breakfast to lunch to cocktail hour and dinner. Their paddock-to-plate approach shines in their elegantly modern dishes, reflecting a deep connection to the land and strong ties to local producers.
The restaurant design is a sophisticated take on the farmhouse aesthetic, with vaulted ceilings and concrete floors grounded by natural timbers, tobacco-brown leathers, and striking equine photography — a tribute to Beechmont Estate’s original owner, an avid polo player. Expansive windows enhance the experience by creating a seamless connection with the stunning natural surroundings.
Guests can unwind by the large stone fireplace or on the Sunset Terrace, enjoy a drink, and take in the serene countryside. The Paddock is not just a place to dine but a place to relax, play a game of cards, and take a moment to savour life’s simple pleasures.
Local produce on show
When we arrived, it was truffle season at Beechmont Estate, and the chefs had created a unique five-course meal centred around this elusive and earthy delight. We had to indulge!
The meal began with an incredible leek and potato soup, enriched with a truffled cheese twist— warm, creamy, and simply melt-in-your-mouth delicious. Next was a fillet of perfectly moist and buttery Murray cod paired with Jerusalem artichoke, king mushroom, and a light hazelnut and truffle sauce. The wild-shot Australian venison that followed was cooked to perfection, and the truffled pumpkin pie was both unique and delicious. And, just when we thought we couldn’t possibly fit another bite, the toasted sourdough ice cream created a delightfully surprising finale.
The perfect pairing
If you’re anything like us, no fine-dining experience feels complete without the ideal wine pairing. At The Paddock, the resident sommelier crafts a carefully curated wine list starring top selections from Australia and Europe. With iconic varieties like Barolo, Chianti, and Sancerre, each wine has been chosen to ensure there is always a drop to perfectly complement the flavours on the plate.
Stay awhile
We stayed in one of the retreat’s Beechmont Cabins, an easy walk from the restaurant and beautifully appointed with a king bed, an ensuite, a potbelly fireplace, and a private deck. As we settled in for the afternoon, we slid open the doors to take in the bucolic views (complete with peacefully grazing cattle) and left them open after dinner. It was a dreamy night’s sleep: the perfect combination of incredible food, wine, and fresh country air!
For couples, we’d also recommend the Hinterland View Cabins which are tucked away on the other side of the hills with amazing views. And, for a special romantic getaway, see the three Luxury Pavilions which are double the size of the cabins and come with separate living areas and freestanding bathtubs. Their spacious decks are made for sunset drinks, affording sweeping views of the polo field and rolling green hills of the estate.
For larger groups looking for Scenic Rim accommodation, perhaps a wedding party or special occasion gathering, the Owner’s Residence would be such a treat. With four bedrooms, a fabulous infinity pool, and jaw-dropping views of both the hinterland and ocean, it comfortably sleeps eight guests. You’ll also enjoy a range of extra inclusions — think welcome Champagne, daily lunch and dinner, and Kitchen Garden tours with one of the culinary team.
Bring on breakfast
Breakfast is included in the room rate and only available to Beechmont’s well-fed guests: reason enough to book a room for two! The Paddock transforms with the morning sun streaming in, creating a warmly welcoming atmosphere. The team offers a Rustic Farmer’s Platter, billed as a celebration of the finest local produce, so the only thing you need to do is choose your favourite coffee or juice.
It was a beautifully nourishing way to start the day, kicking off with refreshing acai smoothies and warm banana bread, followed by hearty breakfast bowls featuring free-range eggs, halloumi, pumpkin, and pomegranate. Extras such as maple-glazed smoked bacon, sausages, and smoked salmon are also on offer, ensuring there’s no way you can leave hungry!
Around the grounds
We loved having a wander around the sprawling estate (our tip: grab one of the complimentary e-bikes!). If the weather is typical for the region — glorious — we also recommend arranging a bespoke picnic basket and a bottle of wine from the kitchen. Then it’s a simple matter of throwing down a blanket and soaking up the charming country atmosphere. Or pull up a chair on the Sunset Terrace and enjoy a wine and cheese tasting, pairing some of Australia’s top drops with the finest local fromage.
Our only regret? Not leaving time to enjoy a luxurious treatment at the Beechmont Estate Day Spa. This serene sanctuary uses Eminence Organic Skincare products and offers facials, massages, and botanical scrubs and wraps to soothe both body and soul. Next time!
Venturing out
When staying at Beechmont Estate, you’re ideally placed to explore the best of the Scenic Rim. Nearby Lamington National Park is a hiker’s paradise, offering a variety of trails. Or spend an afternoon chasing waterfalls, with breathtaking spots like Moran Falls and the two-tiered Elabana Falls waiting to be discovered.
If you have time, head over to Tamborine Mountain to explore its quaint art galleries, restaurants, and shops. Be sure to stop at Witches Falls Winery and sip your way around a wine or artisanal cider tasting. The grounds are beautiful, and you can linger longer with a grazing platter of local nibbles and artisan cheeses, including decadent Jambreen Triple Cream Brie (our favourite), with your chosen tipple.
