The cultural melting pot that is Macau is an absolute must for foodies, and mezza9 Macau – overlooking the tranquil pool area on the third floor of the luxurious Grand Hyatt Macau – an essential stop for any self-respecting gourmand visiting this part of the world.

Boasting what must be one of the most comprehensive menus in all of Macau, the award-winning restaurant serves up Pan-Asian cuisine from a range of permanent cooking stations. Headed up by master chefs, they serve genuine Macanese dishes, Japanese and Korean food, and a huge array of seafood dishes. But until recently there was a notable gap in the restaurant’s encyclopedic menu: Thai food. 

That situation has been rectified with mezza9 Macau’s latest culinary appointment, Chef Mum. Born in Bangkok, the renowned chef spent many years at the Grand Hyatt Bangkok, during which time she was flown to Hyatt properties all around the world in order to host numerous special Thai food events. 

With Chef Mum presiding over her own permanent Thai cooking station at mezza9 Macau’s chic, open-kitchen restaurant, Holidays for Couples was delighted to accept an invitation to go along and see what all the fuss is about, first-hand.

Thankfully Chef Mum prepared a set menu and saved us from the dilemma of having to choose from the extensive menu of tempting Thai dishes. It was an inspired selection, featuring both classic favourites (think papaya salad and Penang beef curry with Wagyu beef), and a few dishes that took us into new – but very welcome – territory. The deep-fried sea bass with a chilli tamarind sauce, made by Chef Mum herself according to her secret recipe, is a must, while the handmade dumplings – apparently beloved by the Thai Royal family for afternoon tea – were a revelation. After 20-odd trips to Thailand we’d never before been offered these delicate creations, or even realised they were a Thai dish: how extraordinary that our first experience of Thai dumplings was to be in Macau rather than their homeland. Every dish was cooked to perfection, perfectly balanced and bursting with the intricate flavours for which Thailand’s cuisine is so famous: aromatic fresh herbs, sweet tamarind, complex curries and other delights that almost defy description.

With the addition of Chef Mum’s world-class Thai station, Mezza9 Macau’s reputation as one of the city’s finest restaurants is destined to reach even greater heights.
