Gourmands, if Tokyo isn’t already high on your travel wish-list, go ahead and bump it up to the top. Long lauded as one of Japan’s most esteemed hotels, Palace Hotel Tokyo is teaming up with DUCASSE Paris – founded by world-famous chef Alain Ducase – to open a new restaurant.
Set to open this November, the exciting new establishment (named ‘ESTERRE’) promises to impress diners with its contemporary approach to French haute cuisine. The first Japanese hotel restaurant for acclaimed chef and restaurateur Ducasse (the world’s first three-Michelin-starred Michelin chef), the new project will be designed by award-winning Japanese interior designer Shinichiro Ogata.
Chef Alain Ducasse says ESTERRE will blend French technique with outstanding Japanese produce. “It will celebrate the best ingredients that Mother Nature has to offer each season and enhance the very essence of them,” says Ducasse. “We will employ French culinary techniques that turn exceptional ingredients into sublime, elegant, contemporary dishes that are at once healthy, harmonious and sincere.”
