Known for its paddock-to-plate ethos and gourmet cuisine, TBD is set to impress diners as the hotel’s new signature restaurant. With a list of cookbooks to its name and overseen by acclaimed chefs Mark LaBrooy, Darren Robertson (of My Kitchen Rules fame) and MasterChef winner Andy Allen, the restaurant will offer a seasonal menu that celebrates Queensland and northern New South Wales produce.

Many of TBD’s popular dishes will be available to order (including coal-roasted lamp with parsnip puree, burnt shallots and fresh peas; corn fritters with guacamole, fermented cabbage, herb salad, labneh and poached eggs; and crab scramble with green mango, bean shoot salad, house-made Sriracha and cashews) alongside new creations. And with refreshing cocktails, local craft beers and quality coffees on the drinks list, the latest venture from this Australian culinary icon is sure to be a winner with Queenslanders.
