As part of a $6 million refresh, Byron at Byron has opened the doors on Forest restaurant, celebrating local, sustainable produce under Executive Chef Etienne Karner (ex-Park Hyatt Sydney).
Immersed in 45 acres of rainforest, the freshly reopened Crystalbrook Collection Resort is an ideal setting for Karner to combine his world-class experience with abundant Northern Rivers produce. 80% of ingredients will be sourced within a three-hour drive of Byron Bay, with a herb garden and on-property beehives completing the farm-fresh idyll.
Menu highlights include poached Ballina king prawns with avocado, green apple and coriander, Paroo kangaroo tartar with lemon myrtle mayo, and a sweet nest of Kataifi pastry with white chocolate and salted caramel parfait. You’ll also have a wine list of national and international gems and more than 30 sustainable, organic and biodynamic wines to enjoy.
